This week, I decided to make spaghetti and meatballs!
Ingredients: Meatballs: 1 Onion, peeled and chopped finely 750g beef mince 1 cup fresh breadcrumbs 1/4 cup freshly grated parmesan cheese 2 tbsp chopper fresh parsley 1 egg, beaten 1 clove garlic, crushed Rind and Juice of 1/2 lemon Salt and Freshly ground black pepper 1/4 cup plain flour 2 tbsp olive oil 500g spaghetti Sauce: 425g can tomato puree 1/2 cup beef stock 1/2 red wine 2 tbsp copped fresh basil 1 clove garlic, crushed Salt and freshly ground black pepper Method: 1. In a large bowl, combine mince, breadcrumbs, parmesan, onion, parsley, egg, garlic, lemon rind and juice, salt and pepper. Roll tablespoonful of mixture into balls and roll balls in seasoned flour. 2. Place oil in a large frying pan and fry meatballs until golden. Remove from pan drain on paper towels. Set aside. Remove excess fat and meat juices from pan. 3. To make the sauce; in the same pan, combine tomato puree, stock, wine, basil, garlic, salt and pepper. Bring to the boil. 4. Reduce heat and return meatballs to pan. Allow to simmer for 10-15 minutes. While meatballs and sauce are cooking, add spaghetti to a large pot of boiling water, cook until soft. Drain well. 5. Enjoy your delicious meal. My mum and I worked on this together, I also rolled the meatballs. I didn't really face any challenges, when making this dish, except for making sure we had everything which wasn't that hard! COVID-19 although at first made the shops pretty empty, is now quite stocked, so getting food for this dish was pretty easy! This made me really enjoy planning meals and I might continue this! The only thing I could say that I would change, is just try out different pastas! Thanks for reading!
